Marinade:
1cup buttermilk
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp garlic powder
.
Flour Dredge:
1 cup flour
1/2 cup corn starch
1 tbsp powdered sugar
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp paprika
Few dashes of cayenne for some heat
.
Stack on a butter toasted brioche bun with sauce of choice (I used ranch but it’d be great with a spicy mayo as well) with some pickles👌🏻

Italian Pork Ragú! I made this last night to use in a classic Italian lasagna. If you didn’t know, real Italian lasagna doesn’t have ricotta in it! The creaminess comes from a rich béchamel sauce. Funny how America has changed classic recipes so much! I have a video of how I made the lasagna but i’m saving that for something special 😉 (10daysoflasagnaseries)🙃.

Ingredients:
2 stalks of celery
2-3 carrots
3 white onions
3 tbsp olive oil
2 mild Italian sausages (casings removed)
1.5-2 cups of ground sausage
1 cup Italian red wine
2 tbsp tomato paste
2 cups peeled tomatoes
2 bay leaves
1 bunch fresh basil
.
Steps:
1. Finely dice the celery, carrots, and onions
2. Add the veggies to a preheated dutch oven with 3tbsp olive oil and cook until tender 7-8 mins.
3. Add in the meat and continuously break it up with your spoon
4. Once almost cooked through add salt and pepper to taste
5. Add in the wine and cook until almost all evaporated
6. Dissolve the tomato paste in a little of the wine and add to the pan, cook for 4 minutes
7. Crush or diced the peeled tomatoes and add to the pan
8. Add in 2 bay leaves and the fresh torn basil
9. Bring to a low simmer and cook, uncovered, for 2-3 hours stirring from time to time
10. Check for seasoning
11. It is ready to enjoy over some pasta or in a beautiful lasagna!
